Did everyone’s grandma have these plates? I found them at the thrift store for 50 cents a pop and I felt compelled to make a cookie to match them and give me “afternoon coffee snack at the Senior Center” vibes. These may be my new favorite cookie and dare I say taste even better than a slice of coffee cake!
Also - it looks like a lot of ingredients but I promise you probably have 99% of them in your cupboard - they come together quicker than you think, I swear!
Ingredients
Cinnamon Sugar Cookies
½ cup (1 stick) butter, softened - always Country Crock plant butter for me!
¾ cup granulated sugar
2 tablespoons brown sugar
¼ cup plant-based milk
2 tsp vanilla extract
1 ½ cup all purpose flour
1 ¼ tsp cornstarch
1 tsp cinnamon
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
Streusel
4 T butter, melted and cooled
½ cup flour
⅓ cup brown sugar
1 tsp cinnamon
½ tsp salt
Coffee Frosting
1 cup powdered sugar
1 ½ tsp instant coffee (I used Cafe Bustelo espresso coffee!)
½ tsp salt
1 tsp vanilla
4 tablespoons heavy cream (Country Crock plant cream is so good!)
Instructions
Make the cookie base
Preheat the oven to 350 degrees. Prepare your pan(s) with parchment paper.
In a large bowl, add your softened butter and both sugars. Using a mixer, beat the butter and sugars together until extremely light and fluffy, really incorporating air into the mixture - at least 4-5 minutes, scraping the bowl and beaters down periodically.
Add the milk and vanilla extract and mix until incorporated.
Add the flour, cornstarch, cinnamon, baking soda and powder, and salt to the bowl and mix. You’ll want to mix this a bit with a spoon or spatula to incorporate the flour a bit before using your mixer, so the flour doesn’t explode everywhere! Mix on low speed until just combined.
Using a large ice cream scoop, roughly ¼ cup, scoop your cookie dough and roll into large rounds. This amount yielded 9 cookies for me! You can make these cookies as small or large as you’d like. Set aside.
Make the streusel & bake
Melt the butter and let cool.
Add the rest of the ingredients to a small bowl, add the butter once cooled and mix with a fork. This will be a fairly dry, crumbly texture.
Add about a tablespoon of streusel on top of your cookie dough balls, pressing them into the dough so they stick. Add the cookies to your preheated oven and bake for about 12-14 minutes. They will have spread, but the streusel will remain intact in chunks! Let cool completely.
Make the frosting & assemble
While the cookies are cooling, mix together all of the frosting ingredients using a fork or spoon - you want it to be fairly thick, but still drizzle-able! If it seems too thick, add a little more heavy cream. If too thin, add a bit more powdered sugar.
Once the cookies are completely cooled, drizzle each cookie with frosting. Enjoy!
